Sour Cream Chocolate Chip Cake

6 Tb butter, softened
1 cup sugar
1 Tb sugar
2 eggs
1 1/3 cup flour
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 cup sour cream
6 oz. mini-semisweet chocolate chips

Mix butter with 1 cup of sugar until creamed, then beat in eggs, one at a time. Stir flour with baking powder, soda, and cinnamon, then blend with cream mixture. Mix in sour cream.

Pour batter into greased and flour dusted 9x13 baking pan. Scatter the chocolate chips evenly over the batter, then sprinkle with a Tb of sugar. Bake 35 minutes at 350 degrees.

Cake should just begin to pull away from the sides of the pan. Serve warm or cool. (do not refrigerate)

12 eggs
5 cups shredded cheddar cheese
1 bunch of green onions
2 cups cottage cheese
ham (however much you want)
1/2 cup butter, melted

Beat eggs really well. Add the rest of the ingredients. Bake for 1 hour at 350 degreese. Use a 9x13 pan.

In one bowl add all dry ingredients and mix well with a wisk. In a separate bowl add all of the liquid ingredients mix well with a wisk. Pour the liquid into the powder slowly while mixing until all dry ingredients are wet but not all small lumps mixed? The batter can be used on a griddle for pancakes or in a waffle iron to make waffles. These can be topped with any topping that you prefer.

French Onion Soup

5-6 sliced onions
1/3-1/2 cup butter
1 can beef consomme
4 cans beef broth
1/8-1/4 cup flour
1 pkg Lipton onion soup mix or 2-3 tsp of beef bullion paste and 1 tsp onion salt
(optional: 1-2 Tb dried onions)

1. In a large pot melt butter and layer onions.
2. Cook covered over medium heat for 10-12 minutes until onions wilt and become clear and reduced.
3. Uncover and stir and cook until caramelized and golden brown (you can add 1-2 tsp sugar)
4. Stir flour into onions
5. Add the rest of the ingredients. Simmer 10-15 minutes
6. Slice a loaf of French bread into thick pieces
7. Toast in oven until crispy (watch carefully, they burn easily_
8. Put a piece of bread in an oven safe bowl. Ladle soup over the bread
9. Cover with a slice of cheese or spirnkle with cheese (Swiss, gruyere, or provolone)
10. Place bowls on a cookie sheet and broil until cheese melts.

1 head lettuce, cut up
1/2 lb. bacon, fried crisp and crumbled
1/2 onion, finely chopped

Mix well and mix with dressing.

Dressing:1-2 cup Miracle Whip
1/2 cup sugar
1/3 cup parmesan cheese

2 tsp. worcestershire sauce

2/3 cup chopped nuts (almonds or pecans)

Soften cream cheeses, in large bowl, mix everything except nuts. Shape into a ball and chill over night. Roll in nuts.

Cake:
4 cups peeled and chopped apple (granny smith)
1/2 cup oil
2 unbeaten eggs
2 cups sugar
2 cups flour
2 tsp. cinnamon
1 tsp. salt
2 tsp. soda

Combine first four ingredients, then add: 1 tsp vanilla and 1 1/2 cups chopped nuts. Add sifted dry ingredients and mix well. (Batter will be stiff). Put into rectangular cake pan. Bake 40-45 minutes at 350 degrees.

Topping:
1/4 cup butter
2 T. milk
1/2 cup brown sugar

Bring to a boil all topping ingredients. cook one minute and pour over cake. Serve warm with whipped cream or vanilla ice cream.

2 lb. ground beef, cooked and drained
1 can (46 oz.) tomato juice
1 can (15 oz.) tomato sauce
1 can (8 oz.) mushroom stems and pieces, drained
2 T. dried minced onion or use 1/2 cup fresh, chopped
2 tsp. salt
1 tsp. garlic powder
1 tsp. ground mustard
1 pkg dry spaghetti sauce mix
1 pkg (7 oz.) spaghetti, broken in half

In a 5-quart slow cooker, combine cooked beef, tomato juice, tomato sauce, mushrooms, and seasonings. cover and cook on HIGH for 4 hours. Stir in spaghetti. Cover and cook on HIGH 1 hour longer, or until the spaghetti is tender. Makes 8-10 serivings.

2 carrots chopped
1 small onion chopped
1 stalk celery chopped
1 cup white, brown, or wild rice
fresh chopped herbs or dried (basil, oregano, or rosemary)

Mix all together and form a ball. Place in crockpot with 1/2 cup water. Cook on LOW for 8 hours. Easy to make and great to come home to!

1/4 tsp. nutmeg
pinch cloves

Brown 2-3 lbs of cubed stew meat with a chopped onion and garlic. Transfer to crockpot. Add your soy sauce, sugar, nutmeg and cloves. The meat should be completely submerged. Add water or more soy sauce if needed (equal parts sugar and soy sauce). Cook on LOW for 3-4 hours until tender. Serve over rice.

6 boneless chicken breasts
1 pkg. dry Italian dressing mix
1 (10 3/4 oz.) can cream of chicken soup
1/4 cup butter
1 (8 oz.) pkg cream cheese
1 (14 oz.) can chicken broth

Place chicken, seasoning mix, soup, butter, and broth into crockpot. Cook 6 hours on LOW if chicken is frozen, 3 hours if chicken is thawed. Take chicken out and cut up. Return to crockpot and add cream cheese. Heat through. Serve over rice or noodles.

For Freezer Meal:
put all ingredients except cream cheese in large freezer bag. Have cream cheese on hand in freezer. Thaw and prepare as directed.

21 oz. can of pie filling (choose your favorite)
1 pkg. yellow cake mix
1/2 cup butter, melted
1/3 cup slivered almonds, optional

Place pie filling in greased slow cooker. Combine dry cake mix and butter (mixture will be crumbly). Sprinkle over filling. Sprinkle with almonds. Cover and cook on LOW for 4 hours or on HIGH for 2 hours. Allow to cool, then serve in bowls with ice cream.

Lower heat and add:
8 oz. cream cheese


Melt and mix in well before proceeding. You may add some of the coconut milk or broth to accomplish this.


Next add:
1 (13 oz.) can coconut milk (unsweetened)
2 cups broth (white miso-reconstituted)
1 lb. pumpkin puree
2 T. cajun seasoning with cayenne
1 tsp. real salt
2 T. honey


Serve in a cleaned umpkin - you can serve any creamy soup in this manner.

1 can (6 oz.) Italian-style tomato paste
2 large sweet onions cut in half and sliced
24 frozen Italian-style meatballs, 1 inch in diameter
6 submarine or hoagie buns, split
3/4 cup shredded mozzarella cheese


Mix water, brown sugar, and tomato paste in 3-4 quart slow cooker. Stir in onions and frozen meatballs.
Cover and cook on LOW for 6-8 hours.
Spoon meatball mixture into buns. Sprinkle with cheese.
Makes 6 sandwiches.

Mix all together by hand in bowl.
Spray crockpot with cooking spray. Add cake mix.
Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
Top with real whipped cream.

Crockpot Lasagne

8 uncooked lasagne noodles
1 lb. ground beef
1 tsp Italian seasoning
1 jar (28 oz) spaghetti sauce
1/2 cup water
1 (15 oz) container cottage cheese
2 cups shredded mozzarella cheese

Spray crockpot. Brown ground beef, add Italian seasoning. Break up 4 noodles in the bottom of crockpot. Add 1/2 of the hamburger, 1/2 sauce, 1/2 water, 1/2 cheeses. Repeat layers ending with mozzarella. Cook on LOW for 3-3 1/2 hours.
For freezer meal: Combine all ingredients except hanmburger in gallon freezer bag. Put hamburger in separate quart size freezer bag. Put both bags in third gallon bag. Label and freeze. When ready to make, brown hamburger and all ingredients to crock-pot. Cook as directed above.

1 pkg yellow cake mix (remove 1 cup for topping)
1/2 cup melted butter or margarine
1 egg

Filling
1 (16 oz) can solid pack pumpkin
2 1/2 tsp pumpkin spice
1/2 cup packed brown sugar
2 eggs
2/3 cup milk
1/4 tsp salt

Topping
1 cup reserved cake mix
1/4 cup sugar
1 tsp cinnamon
1/4 cup butter

Grease 9x13 pan. Combine cake mix (minue 1 cup) butter and egg. Pres into bottom of pan. Mix filling until smooth. Pour over crust. For topping, combine all ingredients. Sprinkle over filling. Bake at 350 for 45-50 minutes, until knife comes clean. Let set for 10 minutes. This may seem too soft, but it will set up as it cools.
Serve with Cool Whip or vanilla ice cream.

1 can kidney beans, drained

Pour everything into a pot or crockpot and heat thoroughly. This is a HUGE recipe. You can also add meat to this recipe. Great use for leftover meat.

Freezer Meal: Pour ingredients into two gallon-sized freezer bags and freeze. Thaw before heating.

1 pkg taco seasoning mix
8 oz. apricot jam
12 oz. salsa
4-6 pieces of chicken

For immediate cooking: Preheat oven to 350. Place all ingredients into large baking dish, turn chicken to coat. Bake until chicken juices run clear. 23-30 minutes for chicken breasts.

For freezer meal: Place all ingredients into a gallon freezer bag. Lay flat in freezer.
To thaw and cook: Take the bag out of the freezer the night before. Thaw in refrigerator. Follow instructions from above or can be cooked in crockpot.
Serve over rice or along side mashed potatoes.

1 can (20 oz) pineapple chunks with juice

2 tsp soy sauce

Put pork chops in a plastic storage bag. Mix remaining ingredients. Pour over pork chops in bag. Seal bag and freeze. Pun in crockpot on low for 6-8 hours or until done. OR grill them OR broil them.
Serve with rice.

2 cups Ritz crackers, crushed (about 45 crackers)
3/4 cup shredded mozzarella cheese
1/4 tsp parsley

1/3 cup apple juice

Mix crackers, cheese and seasonings together. In a separate bowl, mix together margarine and apple juice. Dip chicken in margarine mixture and then coat with cracker mixture. If freezing, place in foil pan and freeze. Otherwise, place in greased baking dish. Bake at 350 for 1 hour.

1 box stuffing mix (chicken flavored)
1/2 cube butter or margarine
2 cups chicken, cooked and diced
1 can cream of chicken soup
1 can cream of celery soup
1 cup milk
2 large stalks of celery, washed and sliced

Melt butter. Stir into entire package of stuffing, turning to coat as evenly as possible. Reserve 1/3 of mixture and set aside. Cover the bottom of a 9x13 pan with the stuffing. Mix all of the other ingredients together and pour over the top of the stuffing. Use the reserved stuffing mix to sprinkle over the top of the casserole. If freezing, cover with foil and freeze. Otherwise, cover and bake at 350 for 30 minutes or until bubbly. Uncover the last 10 minutes of baking.

Mix first 6 ingredients. Spread some in bottom of 9x13 pan. Alternate with layers of tortillas and filling, ending with filling. Dot the top with black olives, if desired. Bake at 350 for 30 minutes. Let stand for 5 minutes before serving.

Mix dry ingredients. Add milk, oil, and vanilla. Fold in egg whites. Do not beat. Cook in waffle iron until crisp and golden. Serve with syrup or strawberries and whipped cream.

1 large pkg. instant vanilla pudding
2 small cans pineapple tidbits, drained
1 medium can madarin oranges
1 medium tub cool whip
2 c. buttemilk
1 pkg. striped shortbread cookies

Mix all ingredients together then crumble all but 4 cookies in and mix. Crumble remaining cookies over top. Refrigerate 2 hours. Serves 10-12

2-3 skinless, boneless chicken breasts
Teriyaki marinade
1/2 c. sugar
1/2 c. apple cider vinegar

1 red onion, diced

1 bunch broccoli, cut into small pieces
1 cucumber, diced
1 zucchini, diced
1 can sliced olives, drained (small can)
1 c. mozzarella cheese, shredded

Marinade chicken breasts in Teriyaki marinade for at least 2 hours (overnight is preferred). Cook and cool. Cut into small pieces. Cook, drain, and cool pasta. Mix in bowl: sugar, olive oil, vinegar, and Mrs. Dash. Add a dash of salt and pepper. Add to above mixture: onion, green pepper, broccoli, cucumber, zucchini, olives, cheese, chicken, and pasta.

Sweet Tortilla Chips:
4 (about 8") flour tortillas
1 Tbs. butter or margarine, melted
1 Tbs. sugar
pinch ground cinnamon

Preheat oven to 375. Brush tortillas with butter. In cup, combine sugar and cinnamon. Sprinkly 1 side of each tortilla with cinnamon-sugar. Stack tortillas and cut into 6 wedges, making 24 wedges in total. Arrange wedges, sugar side up, in single layer on 2 large cookie sheets. Place cookie sheets on 2 oven racks and bake chips 10-12 minutes or until golden, rotating cookie sheets between upper and lower racks halfway through baking. Cool chips on cookie sheets on wire racks. Store chips in tightly covered container up to 1 week.

Summer Salsa:
1 lime
1 Tbs. sugar
1 large ripe peach, unpeeled and chopped
1 large ripe plum, unpeeled and chopped
1 large ripe apricot, unpeeled and chopped
1/2 c. cherries, pitted and chopped
1/2 c. seedless green grapes, chopped

From lime, grate 1/4 tsp peel and squeeze 1 Tbs. juice. In medium bowl, stire lime peel, lime juice, sugar, and chopped fruit until combined.

1 lemon, juiced
1 T. coconut oil
1 clove garlic
1 tsp. salt
1/2 tsp. pepper

3 tsp. coconut flavor
1/2 tsp. vanilla
5 egg yolks
1/2 c. sugar
1/2 tsp. salt
shredded coconut (optional)

Pour milk, coconut flavor, and vanilla into a saucepan and bring to a light simmer. Whle it is heating up, whisk the egg yolks and sugar in a separate bowl. Once the milk starts to simmer, turn off the heat and whisk 1/2 of the milk mixture into the egg mixture. Pour this into the saucepan with remaining milk. Turn heat on LOW. Whisk for about 10 min. over low heat. Take off heat. Whisk in salt and let it cool. Cover and refrigerate overnight, or at least 8 hours.

10 minutes before processing in ice cream maker, put the mix into the freezer along with the dasher. Do not leave it in the freezer for more than 10 minutes. Process according to your ice cream maker. Stir in shredded coconut by hand (optional). Makes 8 servings.

3/4 c. chopped onion
1 c. green onion
1 (14 oz.) can diced tomatoes
3/4 c. picante sauce
2 cloves garlic
2 tsp. cumin
2 (15 oz.) cans black beans
12 6" corn tortillas
2 c. shredded cheese

Mix first seven ingredients and simmer for 10 minutes. Layer according to this:

1/3 sauce
1/2 tortillas
1/2 cheese
1/3 sauce
1/2 tortillas
1/3 sauce

Bake for 25 minutes at 350 degrees. Immediately after removing from the over, layer the remaining cheese and allow to melt.

Yankee Doodle Pot Roast

1/2 c. beef broth
1/2 c. teriyaki or soy sauce
1/4 c. vegetable oil
2 Tbs. brown sugar
2 Tbs. finely chopped onion
3 cloves garlic, minced
1 tsp. worcestershire sauce (optional)
1/2 tsp. hot pepper sauce (optional)
3-4 lb. boneless beef sirlion tip roast

In a large resealabe bag, comine all ingredients, except roast. Mix well. Add roast. Seal bag and put inside second bag. Refrigerate overnigh to marinate. Freeze or cook as follows:

1. Thaw completely in refrigerator. Discard marinade. Grill roast, covered, over mediem heat for 2-2.5 hours or until meat reaches desired tenderness.

2. Thaw completely in refrigerator. Put 1.5-2 cups of the marinade and roast in crockpot. Cook on low for 6-8 hors or on high for 3-4 hours. Let stand 10-15 minutes before slicing.

Brown pork chops in skillet. Spray 9x13 pan and layer pork chops. Combine sugar, mustard, and salsa and pour over pork. Bake at 400 degrees for 35-40 minutes or until done. Serve over rice.

Can also be done in a crockpot. Cook on high for 3-4 hours, on lov 6-8 hours.

For Freezer Meal: Put chops in gallon-size freezer bag. Make sauce and put in a second bag. Put both bags in a third bag and seal. When ready to make, thaw at room temperatur. Brown pork chops and proceed as above.

1 can pink lemonade concentrate
1 half gallon vanilla ice cream
2 1/2 c. graham cracker crumbs
6 Tb. sugar
2/3 c. butter or margarine

Melt butter and mix with graham cracker and sugar. Press in bottom of 9x13 pan. Mix together softened ice cream and lemonade concentrate. Spread evenly over graham cracker crust. Sprinkle extra graham cracker crumbs on top (optional). Freeze.

1 tsp. ground mustard
1 tsp. garlic
1 Tbsp. butter
3 Tbsp. worcestershire sauce
1/4 c. olive oil
large can of French's French Fried Onions/Crushed

Wisk together first 5 ingredients. Warm sauce just until butter is melted. Dip each piece of chicken into the sauc and then roll in crushed French fried onion until coated. Place in a baking dish. Bake at 350 until juices run clear and chicken looks crispy. If chicken pieces are large cut length wise to use.

For Freezer Meal: Place all the sauce ingredients in one small baggie. Place chicken in another bag and add small sauce bag. Freeze. Keep onions in pantry.

Serve with mashed potatoes and veggie or salad.

1 can French style green beans

Put steak, flour, salt, and pepper in crockpot and stir well to coat meat. Add rest of ingredients. Mix together. Cover and cook 6-8 hours on low. Serve over rice.

For Freezer Meal: Place flour, salt pepper, and stew meat in large Ziploc freezer bag. Shake to coat meat. Mix all remaining ingredients except green beans and pour over meat. Double bag and freeze. When ready to prepare, thaw and cook as direted above, adding the green beans with the other ingredients.

4 chicken breasts
1 can black beans, drained
1 can corn
1 (16 oz.) jar of salsa
1 pkg. cream cheese

Put chicen, black beans, corn, and salsa in bag and freeze. Cook in crockpot for 7 hours if frozen, and 3 hours if thawed. Take out chicken and shred. Put chicken and cream cheese back in crockpot. Let the cream cheese melt. Serve over rice or as taco filling. Add lettuce, cheese, and tomatoes.

12 chicken tenderloins
1/2 c. honey
1/3 c. mustard
1/2 tsp. salt
2 tsp. curry powder

Mix the sauce and pour it over the chicken. Bake at 350 degrees for about 30 minutes, or until done.

For Freezer Meal: Mix all the sauce ingredients in a sandwich sized freezer bag. Put chicken in a gallon-sized freezer bag and but both bags in a third bag. Freeze. When ready to cook, thaw in fridge and cook as directed.

1 (16 oz.) can sliced peaches, with syrup

1 box yellow cake mix
1 stick butter or margarine, melted
1 (8 oz.) Cool Whip
Preheat oven to 350. Pray a 9x13 pan with cooking spray. Spread peaches with syrup over bottom of pan. Sprinkle cake mix evenly over peaches, patting down gently. Drizzle melted butter over dry mixture. Bake cake 30-35 minutes, until golden brown. Serve warm, topped with Cool Whip or ice cream.

For Freezer Meal: Prepare as directed. Freeze. When ready to use, defrost in refrigerator and bake as directed.

Apricot Chicken

1 (18 oz.) jar Apricot Preserves
1/2 bottle (8 oz.) Russian salad dressing
1 pkg. Lipton onion soup mix
1 lb. chicken

Dice uncooked chken (or you can leave it in whole breasts), mix ingredients and pour over chicen in baking dish. Bake at 350 for 45 minutes. Serve over rice. This can also be done in the crockpot and makes an easy, yummy chicken dish.

For Freezer Meal: Put everything in a large freezer bag and freeze. When ready to use, thaw in the fridge and prepare as directed above.

Pepperoni Pizza Bake

2 cans Jumbo flaky biscuits
1 c. pizza sauce
2 c. shredded mozzarella cheese
30-40 pieces pepperoni (and any other toppings)

Cut biscuits into bite sized pieces. Add sauce, 1 c. cheese, and toppings and stir together. Spread evenly in greased 9x13 pan. Top with remaining cheese. Bake covered 40-50 min. at 350 degreese or until dough in middle is fully cooked. Dough will puff up, almost double in height, while it cooks. Some variations are veggie pizza bake, or Hawaiian (ham and pineapple). Use whatever toppings you have. This is a great meal to get rid of leftover ingredients.

For Freezer Meal: Take out of freezer the night before serving. Make sure meal is completely thawed before cooking. Follow baking instructions above.

1 lb. boneless pork loin
1 T. taco seasoning mix
1 T. vegetable oil
1 c. chunky salsa
1/3 c. peach preserves

Cut the pork into 3/4 inch cubes. Combine pork with taco seasoning. Mix in a Ziploc bag. Shake to coat pork. Marinate in refrigerator, turning the bag occasionally for 1-2 hours. Heat the oil in a large nonstick skillet over medium-high heat. Add the pork. Cook, stirring frequetnly, until pork is browned on all sides, about 10 minutes. Stir in salsa and preserves. Reduce heat to low. cover the skillet. Simmer, stirring occasionally, until the pork is cooked through, about 20-25 minutes. Serve over hot rice.

For Freezer Meal: Put pork and taco seasoning mix in freezer bag. Put salsa and preserves in a separate small Ziploc and put both in a third bag. Freeze. When ready to cook, thaw and cook as directed above.
