Christmas Cheesy Potatoes

Christmas Cheesy Potatoes
served at ward Christmas Party

1 large package frozen shredded hash browns
2 can cream of chicken soup
1 cup sour cream
1 dry Ranch dressing packet*
1 tsp garlic or onion powder
1 small onion, sauteed in butter
2 cups shredded cheddar chesse
salt and pepper to taste

Mix the above ingredients together in a large bowl.  Spray 9x13 pan with non-stick spray and place potato mixture in pan.  Top with either bread crumbs or crushed corn flakes that have been mixed in about 1/3 cup melted butter.

Bake for 1 hour in a preheated 350 degree oven.

12 eggs
5 cups shredded cheddar cheese
1 bunch of green onions
2 cups cottage cheese
ham (however much you want)
1/2 cup butter, melted

Beat eggs really well. Add the rest of the ingredients. Bake for 1 hour at 350 degreese. Use a 9x13 pan.

Stove Top Chicken Casserole

1 box stuffing mix (chicken flavored)
1/2 cube butter or margarine
2 cups chicken, cooked and diced
1 can cream of chicken soup
1 can cream of celery soup
1 cup milk
2 large stalks of celery, washed and sliced

Melt butter. Stir into entire package of stuffing, turning to coat as evenly as possible. Reserve 1/3 of mixture and set aside. Cover the bottom of a 9x13 pan with the stuffing. Mix all of the other ingredients together and pour over the top of the stuffing. Use the reserved stuffing mix to sprinkle over the top of the casserole. If freezing, cover with foil and freeze. Otherwise, cover and bake at 350 for 30 minutes or until bubbly. Uncover the last 10 minutes of baking.

Sour Cream Enchilada Casserole

1 pint sour cream
1 pint cottage cheese
2 cups grated cheddar cheese
2 cups grated monterey jack cheese
1 (7 oz.) can diced green chiles
2 cans cream of chicken soup
12 corn tortillas
black olives (optional)

Mix first 6 ingredients. Spread some in bottom of 9x13 pan. Alternate with layers of tortillas and filling, ending with filling. Dot the top with black olives, if desired. Bake at 350 for 30 minutes. Let stand for 5 minutes before serving.

Black Bean Casserole

3/4 c. chopped onion
1 c. green onion
1 (14 oz.) can diced tomatoes
3/4 c. picante sauce
2 cloves garlic
2 tsp. cumin
2 (15 oz.) cans black beans
12 6" corn tortillas
2 c. shredded cheese

Mix first seven ingredients and simmer for 10 minutes. Layer according to this:

1/3 sauce
1/2 tortillas
1/2 cheese
1/3 sauce
1/2 tortillas
1/3 sauce

Bake for 25 minutes at 350 degrees. Immediately after removing from the over, layer the remaining cheese and allow to melt.

Pepperoni Pizza Bake

2 cans Jumbo flaky biscuits
1 c. pizza sauce
2 c. shredded mozzarella cheese
30-40 pieces pepperoni (and any other toppings)

Cut biscuits into bite sized pieces. Add sauce, 1 c. cheese, and toppings and stir together. Spread evenly in greased 9x13 pan. Top with remaining cheese. Bake covered 40-50 min. at 350 degreese or until dough in middle is fully cooked. Dough will puff up, almost double in height, while it cooks. Some variations are veggie pizza bake, or Hawaiian (ham and pineapple). Use whatever toppings you have. This is a great meal to get rid of leftover ingredients.

For Freezer Meal: Take out of freezer the night before serving. Make sure meal is completely thawed before cooking. Follow baking instructions above.
